Slow Food, al Salone del Gusto di Torino i nuovi presìdi italiani

Oggi per il nostro consueto appuntamento del fine settimana con l’alimentazione sostenibile ci occupiamo dell’ottava edizione del Salone Internazionale del Gusto in corso in questi giorni a Torino (21-25 ottobre) in concomitanza con la quarta edizione dell’incontro mondiale della rete di Terra Madre.

Tanti gli argomenti ed i temi trattati nel corso della manifestazione culturale ed enoganostronomica così come  numerosi gli stand presenti all’interno del Lingotto Fiere (via Nizza, 280). Si è parlato di slow fish, pesca sostenibile, slow wine con la pubblicazione della guida dei vini che rispondono ai requisiti slow: buono, pulito e giusto. Chiave di lettura privilegiata nel rapporto cibo più territorio di questa edizione è la biodiversità, in occasione dell’anno internazionale dedicato alla diversità biologica.

Nella Sala Educazione e Biodiversità del Padiglione hanno fatto il loro esordio questa mattina 22 nuovi Presìdi italiani, punto di rivalorizzazione, riscoperta e rinascita di tradizioni enogastronomiche legate al territorio, agli allevamenti, alla cultura e alla produzione agricola in chiave locale. Vediamo di quali si tratta:

  2. La lenticchia di Mormanno in Calabria
  3. Fagiolo di Controne –  Campania
  4. Salsiccia rossa di Castelpoto – Campania
  5. Susianella di Viterbo – Lazio.
  6. Albicocca di Valleggia – Liguria.
  7. Gallo nero della Val di Vara – Liguria
  8. Razza bovina cabannina – Liguria
  9. Agrì di Valtorta – Lombardia
  10. Stracchino all’antica delle Valli Orobiche – Lombardia
  11. Peperone di Capriglio – Piemonte
  12. Piattella canavesana di Cortereggio – Piemonte
  13. Sedano rosso di Orbassano – Piemonte
  14. Biscotto di Ceglie – Puglia
  15. Carote di Polignano – Puglia
  16. Pomodoro regina di Torre Canne – Puglia
  17. Fava cottòra dell’Amerino – Umbria
  18. Mazzafegato dell’Alta Valle del Tevere – Umbria
  19. Aglio bianco di Adria – Veneto
  20. Antico orzo delle valli bellunesi – Veneto
